Okra Patties

This is a recipe that my aunt makes. If you have a lot of okra in your garden and are looking for another way to use it, this little patties are so good!

1 c. sliced okra
1/2 c. onion, chopped
1/2 c. tomatoes, chopped
1 egg
1/4 c. cornmeal
1/4 c. flour
Salt
Pepper

Mix ingredients, shape into patties, fry in hot oil until browned.

I didn't grow any this year. I think I'll go steal some out of mom's garden!

To answer your question on my blog, yes, I just got the cookbook this afternoon! I've already made it through appetizers and soup/salads. Can't wait to try some! Thanks!

Being a country raised girl, I've never tried okra. Hard to believe.
Maybe I'll put Okra on my shopping list for the new week.

That sound so good, I am not crazy about Okra but the patty idea is not a bad idea.
