That's what I've been up to my eyeballs in the last couple of days. Monday night we put up 13 gallon bags of corn on the cob and 11 quart bags of cut off. I have two wash tubs full to shuck, silk, and cut off today for use this winter in homemade vegetable soup, my mom's fried corn (Mmmmm!) and other dishes. It's well worth the effort when you take a bite of soup with hot biscuits while the snow if falling outside.
I haven't had a giveaway in a while, so in honor of my mom's corn dish and my homemade veggie soup (yes, both recipes are in the cookbook), I am having a cookbook giveaway.
All you have to do to enter is tell me what your favorite summer garden vegetable is. I have a difficult time choosing between home grown tomatoes and sweet corn!

Got to be Tomatoes! Green and ripe! Like you, I've been up to my eye balls too! Mine however is tomatoes, cucumbers and okra!However this winter, MAGIC!
This post has reminded me of the lovely winter days when we come in from the cold to enjoy a hearty meal. I love those days.

Yellow squash--from my grandmother's garden and cooked in her kitchen was always my favorite. YUM.
Sooo hard to pick any one over another...but I'll go with the easy to grow zucchini, for it's versatility. Plus, I feel I owe it to sing it praise as it even grows out here on our windy and cold Maine island! A warrior!
Definitely tomatoes for me! Nothing beats the flavor of a fresh cherry tomato bursting in your mouth on a hot day. :)
I have a hard time deciding what I like when it comes to fresh veggies!! Well I love them all !!
Hard choice but I'd have to say zucchini.
MMM, I love eating a cold cucumber!! Tonight we had a veggie supper straight from the garden! Corn, fried squash, okra, tomatoes, bell peppers, and of course, cucumbers!
I love both as well, but there is absolutely NOTHING better than fresh tomatoes off the vine, still warm from the sun. I could eat & eat & eat until my lips fall off! lol!
