Potato Salad

POTATO SALAD
10 to 12 potatoes
3 hard-boiled eggs
1 lg. jar diced pimentos
2 to 3 T. sweet pickle relish
1 lg. onion, chopped
1 lg. green pepper, chopped
Salt
Miracle Whip

Peel and cube potatoes. Put potatoes in a large pot with a little salt and boil until slightly tender when pierced with a fork. Do not overcook. Drain and let cool. While cooling, boil 3 eggs, peel and chop eggs. When potatoes are completely cool, add eggs, pimentos, sweet pickle relish, onion and green pepper. Mix just enough to blend ingredients. Add several large spoons of Miracle Whip salad dressing and mix. Continue adding Miracle Whip until ingredients are well-coated. Salt to taste. Refrigerate.
